Baingan Bharta without Roasting | भरता जैसी बैंगन की सब्ज़ी | Eggplant Recipe | kabitaskitchen
Preparation time – 40 minutes
Serving- 3
Ingredients:
- Eggplant(Brinjal/ baingan)-1 (400 gm approx.)
- Onion(chopped)-3 (medium)
- Fresh green peas-50 gm or 1/2 cup
- Curry leaves- 10 to 12 Green chilli-2
- Tomato(chopped)-2 (medium)
- Ginger garlic paste- 1tsp
- Coriander leaves(chopped)-1/4 cup
- Cooking oil-4 tbsp
- Cumin seeds-1 tsp
- Turmeric powder-1/2 tsp
- Red chilli powder- 1 tsp
- Garam masala powder-1/3 tsp
- Coriander powder-1/3 tsp
- Cumin powder-1/3 tsp
- Salt to taste or 1 tsp
Method:
- Cut both the ends of eggplant an peel it properly.
- Take water in a bowl and cut it into small pieces and put it into the water.
- Turn on the flame and heat a pan, add oil.Let it heat properly.
- Add cumin seeds and fry it for few seconds.
- Add curry leaves and green chilli and fry it for another few seconds.
- Add onions and fry it for 3-4 minutes on medium flame.
- Add green peas , Mix it. Fry it for 3-4 minutes on medium flame.
- Add ginger garlic paste and Mix it well.Cook it for a minute on medium flame.
- Reduce the flame to low
- Add all the spices except garam masala , mix it well.
- Cook it for 1/2 minute on low flame and cover the pan.
- Open the lid and stir it.
- Add eggplant(baingan) , add salt, Increase the flame to medium and mix it well.
- Cover the pan and cook it for 12-15 minutes on low-medium flame.
- Open the lid and stir it.
- Add tomato, mix it well, Cover the pan and cook it for 12-15 minutes on low-medium flame.
- Open the lid and stir it and Keep mashing the eggplant. Cover the pan and cook it.
- Open the lid and stir it and Add garam masala powder and coriander leaves.
- Increase the flame to medium-high and cook it for a minute , Keep stirring
- Turn off the flame Cover it and leave it for a minute
- Take it out in a serving bowl/plate.
- You may garnish it with coriander leaves. Ready to serve
