Baingan Bharta without Roasting | भरता जैसी बैंगन की सब्ज़ी | Eggplant Recipe | kabitaskitchen

Preparation time – 40 minutes

Serving- 3

Ingredients:

  • Eggplant(Brinjal/ baingan)-1 (400 gm approx.)
  • Onion(chopped)-3 (medium)
  • Fresh green peas-50 gm or 1/2 cup
  • Curry leaves- 10 to 12 Green chilli-2
  • Tomato(chopped)-2 (medium)
  • Ginger garlic paste- 1tsp
  • Coriander leaves(chopped)-1/4 cup
  • Cooking oil-4 tbsp
  • Cumin seeds-1 tsp
  • Turmeric powder-1/2 tsp
  • Red chilli powder- 1 tsp
  • Garam masala powder-1/3 tsp
  • Coriander powder-1/3 tsp
  • Cumin powder-1/3 tsp
  • Salt to taste or 1 tsp

Method:

  • Cut both the ends of eggplant an peel it properly.
  • Take water in a bowl and cut it into small pieces and put it into the water.
  • Turn on the flame and heat a pan, add oil.Let it heat properly.
  • Add cumin seeds and fry it for few seconds.
  • Add curry leaves and green chilli and fry it for another few seconds.
  • Add onions and fry it for 3-4 minutes on medium flame.
  • Add green peas , Mix it. Fry it for 3-4 minutes on medium flame.
  • Add ginger garlic paste and Mix it well.Cook it for a minute on medium flame.
  • Reduce the flame to low
  • Add all the spices except garam masala , mix it well.
  • Cook it for 1/2 minute on low flame and cover the pan.
  • Open the lid and stir it.
  • Add eggplant(baingan) , add salt, Increase the flame to medium and mix it well.
  • Cover the pan and cook it for 12-15 minutes on low-medium flame.
  • Open the lid and stir it.
  • Add tomato, mix it well, Cover the pan and cook it for 12-15 minutes on low-medium flame.
  • Open the lid and stir it and Keep mashing the eggplant. Cover the pan and cook it.
  • Open the lid and stir it and Add garam masala powder and coriander leaves.
  • Increase the flame to medium-high and cook it for a minute , Keep stirring
  • Turn off the flame Cover it and leave it for a minute
  • Take it out in a serving bowl/plate.
  • You may garnish it with coriander leaves. Ready to serve
