Veg Biryani in Pressure Cooker – Kabitaskitchen

Preparation Time for Veg biryani:   minutes

Serving –

Ingredients for Veg biryani:
Rice(basmati)- 1 glass or 1.25 cup (200 gm approx.)
Paneer (indian cottage cheese)- 100 gm
Potato- 1
French beans – 50 gm
Carrot- 1/3 cup
Cauliflower – 1/2 cup
Onion- 2 (large)
Coriander leaves – 1/3 cup
Mint leaves – 1/4 cup
Ginger garlic paste – 1/2 tbsp
Cooking oil
Ghee – 2 tbsp
Bay leaves- 1
Black cardamom – 1
Cinnamon- 1 inch
Mace (javitri)- 1/3
Cumin seeds- 1/2 tsp
Dry red chilli – 1
Turmeric powder – 1/3 tsp
Red chilli powder – 1/3 tsp
Cumin powder- 1/3 tsp, Coriander powder – 1/3 tsp
Garam masala powder – 1/2 tsp
Biryani masala powder – 1/2 tsp
Saffron(kesar)- 1 pinch (optional)
Food colour – 1/5 tsp (optional)

Veg Biryani Recipe:

Turn on the flame and heat a pressure cooker pan
Add oil
Let it heat on high flame
Add onions
Fry it till it turns brown
Once it turns brown, take it out
Add paneer
Fry it for a minute on medium flame
Take out the paneer
Add vegetables
Fry it for 3-4 minutes on medium flame
Take out the fried vegetables
Add little oil, if needed
Add all the whole spices
Fry it for few seconds
Add onions
Fry it for 2-3 minutes on medium flame
Wash the rice and keep it aside- (Do not soak it, washt it and keep it for 20 minutes)
Add ginger garlic paste
Cook it for few seconds on medium flame
Reduce the flame to low
Add turmeric powder
Add red chilli powder
Add coriander and cumin powder
Add shahi biryani masala- You may use any Biryani Masala
Mix it well
Cook it for few seconds on low flame
Turn off the flame and let it cool down
Once it cools down, add curd
Mix it well
Add all the fried vegetables and paneer
Add salt
Mix it well
Turn on the flame
Cook it for a minute on medium flame
Add little salt into the washed rice
Open the lid and stir it
Turn off the flame again before layering
Add 1/2 glass of water – (Do not stir it)
Add little mint leaves and coriander leaves
Add little amount of garam masala and salt
Add fried onions
Add one tbsp of ghee
Put rice and spread it evenly
Add remaining mint and coriander leaves
Add garam masala and salt again
Add saffron milk (kesar)- (optional)
Add one tbsp ghee again
You may add food colour if you like
Add remaining fried onions
Now add one glass of water again- (Use 1.5 glass of water for one glass of rice)
Turn on the flame again and close the lid
Cook it for one whistle on high flame- (It takes approx. 5-6 minutes)
After one whistle, reduce the flame to low
Cook it for 3-4 minutes on low flame
Turn off the flame and let it cool down completely- (do not open before 15-20 minutes)
Open it and check it
Mix it gently from the sides
You may serve it as it is
Or, close the lid and leave it for another 3-4 minutes- (flame should be off )
Open the lid
Take it out in a serving plate/bowl
Serve Veg biryani hot with raita or salan
