Lauki kofta curry recipe
Preparation time for Lauki Kofta Curry-40 minutes

Ingredients for Lauki Kofta Curry:
- Bottle gourd/Lauki(grated)-300 gms
- Gram flour(besan)-100 gm
- Garlic cloves(peeled)-12 to 15
- Ginger(chopped)-2 inch
- Onion (chopped)-2(medium)
- Tomato (chopped)-2(you may use tomato puree instead)
- Carom seeds(ajwain)-1/3 tsp
- Cumin seeds-1/2 tsp
- Turmeric powder-3/4 tsp
- Red chilli powder-2 tsp
- Cumin powder-1/2 tsp
- Coriander powder-1/2 tsp
- Garam masala powder-1/2 tsp
- Coriander leaves for garnishing
- Cooking oil
- Salt to taste
For Kofta:
- Wash your hand properly and squeeze out water from grated lauki, discard the water(you may use the water in curry preparation).
- Add carom seeeds, 1/3 tsp of turmeric powder, 1/2 tsp of red chilli powder, 1/3 tsp of garam masala powder and salt to taste in grated lauki.
- Add gram flour and mix it properly, do not add water.
- Heat sufficient oil in a pan, put little mixture in the hot oil to check its temperature.
- Put small portions of mixture in hot oil to make koftas, keep the flame on medium.
- Fry the kofta till it turns golden brown from both sides, keep flipping in between.
- Once the koftas are fried properly, take it out on kitchen towel and keep it aside.
Note-you may make the koftas in appe/appam pan instead of frying as shown in the video.
Masala Paste Preparation for Curry:
- In a grinding jar: add ginger, garlic and onion, grind it into smooth paste( do not add water).
- Take it out in a bowl and keep it aside.
- Put chopped tomatoes in the same grinding jar, grind it into smooth paste(do no add water).
- Take it out in a bowl and keep it aside.
Curry Preparation for Lauki Kofta:
- Heat oil in a pan, add cumin seeds and fry it for few seconds on medium flame.
- Reduce the flame to low, add red chilli powder and turmeric powder and mix it.
- Add the blended paste(onion, ginger and garlic), cumin powder and coriander powder.
- Mix it properly, Cover the pan cook the masala paste for 2 minutes on low flame.
- Add tomato paste and mix it, cover the pan and cook it for 3-4 minutes on low flame, keep stirring in between.
- Add one glass of water and salt to taste, stir it properly and boil it for 3-4 minutes on medium flame.
- Put all the koftas in gravy, add garam masala powder and stir it, cover the pan and cook it for 2 minutes on low-medium flame.
- Turn off the flame and garnish with coriander leaves.
- Lauki kofta curry is ready to Serve with roti, paratha and rice.
